The Concorde was first created in the 1970’s by legendary French pâtissier Gaston Lenôtre, the founder of “Lenôtre” a culinary empire; whose brand includes restaurants, catering services, retail concerns and cooking schools. The prestigious gastronomy school where Laurent honed his craft. The cake was created as a tribute to the Concorde aircraft which could fly from New York to Paris in less than 3 hours.
