Although it’s disputed what nationality first came up with meringue, all we need to know is that they were a genius. After all, it’s a French word, isn’t it? In our rendition of this French classic, the tang and refreshment of the lemon curd is perfectly balanced by the substance of the almond tart while the torched egg whites add their light sweetness and aesthetic.
