A mousse cake with a sponge base layered with rhubarb compote, strawberry jelly mixed with wild strawberry and strawberry coulis topped off with a strawberry mousse, wrapped in an almond sponge layer, topped with a red glaze, white chocolate, dark chocolate garnished with coconut, whipped cream, strawberries and raspberries.

and the taste?
Could this be the ultimate tribute to the strawberry? The answer is “yes”, but it’s complicated, because without the slightly more acidic taste of the rhubarb and the slightly sweeter raspberry it would never reach these dizzying heights. As if that wasn’t enough, all that fruity yang plays perfectly against the rich yin of white and dark chocolate flecked with coconut.
