Our speciality is range made with a levain, a sour-dough starter whose unique culture and flavour were begun years ago at the first bakery in Como. Levain is traditional in many countries, honoured by bakers who relied on the starter for the next batch. The breads require many hours to achieve their full flavour. Like them, we do not hurry the rising process.
Slow proofing and other traditional bread-making techniques ensure that our customers can enjoy delicious depth of flavour and crustiness. Significantly, the loaves are baked on stone, as they would be in the best artisan bakeries. That is unusual in large-scale production, but it is part of our commitment to quality bread-making.
Laurent Boillon himself has alwyas wanted to bring the flavour of authentic bread to the mass market. The aim is to provide high quality bread at an affordable price for all. It is a challenge that can be met, thanks to the new facilities that are able to supply the wholesale customers with the biggest market share of consumers.
Within the Levain range we offer sourdough white, multigrain, olive and rye breads, sourdough baguettes, parmesan and onion loaf, sourdough rolls and much more.
Our stone baked Levain range offers a selection of premium quality products suitable for catering services, hotels, airlines, retail and in-store bakeries.
